Coffee Walnut Butter
Walnuts are high in healthy fats, but also provide a good amount of protein and plenty of minerals and vitamins. This Nut Butter made from toasted Walnuts and organic coffee is not just healthy, but it’s also such a treat. Super smooth and full of flavor. If you like nut butter then you will love this delicious and rustic walnut butter. I love eating it with noat meal, bake it into keto chocolate walnut brownies or just eat it with a spoon.
TIPS ON MAKING COFFEE WALNUT BUTTER
As with any nut butter, you will need a good quality high-speed blender/ food processor. I use my trusted magi mix which is powerful enough to make super smooth nut butter. It is an investment but you can literally make any kind of nut butter and process so many other food in no time.
Making nut butter takes a little time. It almost seems impossible that the big sticky lump of nuts, that builds a few minutes into processing, will ever become smooth and glossy nut butter. Just be patient and wait a few more minutes, and you will have the most delicious homemade nut butter.
Buy raw and untoasted nuts and then toast them yourself in the oven or roast them in the pan for a few minutes. Warm nuts blend a lot more easily into smooth nut butter, then cold nuts.
You could use a shot or two of espresso instead of the instant coffee, but I would expect the nut butter to be thinner in consistency and maybe not keep as long as with dry coffee.
Store the nut butter in an airtight jar or container, away from sunlight. Make sure to consume with a week or two, otherwise the nuts will turn rancid.
STEP BY STEP
STEP 1. TOAST WALNUTS IN THE OVEN FOR A FEW MINUTES
STEP 2. BLEND WALNUTS WITH, COFFEE, ERYTHRITOL, COCONUT OIL AND SALT TILL YOU HAVE A GLOSSY AND SMOOTH NUT BUTTER. STORE THE NUT BUTTER AIRTIGHT.
Coffee Walnut Butter
- Roast the walnuts in the oven at 150 c for about 5 minutes, or until slightly toasted.
- Add walnuts, organic coffee, powdered erythritol, coconut oil and salt to the food processor.
- Blend till smooth, this will take about 15 minutes.
- Store air tight.
