Chocolate Sprinkles

I love adding sprinkles to my desserts or use them to decorate cakes, cookies, and cupcakes. They just add a little fun, texture, and color to whatever your making. My daughter and I, are obsessed with making and eating our homemade sprinkles. I’ve made colorful sprinkles before by using egg white but these chocolate sprinkles here are completely egg-free. These are healthy and vegan sugar-free chocolate sprinkles.

TIPS ON MAKING SUGAR FREE CHOCOLATE SPRINKLES

The recipe is pretty simple, all you need is a piping bag and the thinnest, round nozzle you can find. The bigger the nozzle, the bigger your sprinkles will be. You also need a steady hand as you will have to pipe the mixture evenly and as straight as possible onto some baking paper or a silicone mat.

You can also pipe little shapes from the mixture, that’s what my daughter does she loves to make love hearts and other fun shapes. If the shapes are not even or have a few too thin parts they may break when you try to remove the dried shape. So small shapes will work best but also larger thicker shapes will work but may need a lot longer to completely dry and harden up. In the following step by step instructions, I will show you how I make the chocolate sprinkles.

STEP 1. MIX COCOA POWDER, POWDERED ERYTHRITOL AND SALT WITH INSTANT COFFEE

STEP 2. ADD WATER AND COMBINE EVERYTHING REALLY WELL

STEP 3. FILL THE MIXTURE INTO A PIPING BAG WITH THE THINNEST NOZZLE ATTACHMENT

STEP 4. PIPE THIN AND EVEN LINES ONTO BAKING PAPER OR A SILICONE MAT

STEP 5. LEAVE TILL COMPLETELY DRIED, THEN BREAK INTO SMALL SPRINKLES AND STORE AIRTIGHT.

Instructions

  • Add cocoa powder, powdered erythritol, salt and instant coffe to a bowl and mix well.
  • Slowly add water by the table spoon and combine until you have a smooth and glossy mixture with no lumps..
  • Attach the thinnest nozzle to the piping bag and then fill the piping bag with the chocolate mixture.
  • Pipe thin and even lines onto baking paper or a silicone mat.
  • Leave to dry completly. Once dry break the lines into small spinkles.
  • Store dry and air tight.

Notes

You may only need 3 1/2 tbsp of water instead of 4 tbsp, depending on how much liquid your cocoa powder absorbs. I made the sprinkles with different cocoa powders and some seem to need the extra 1/2 tbsp of water to make a smooth paste.
The net carbs in this recipe will come from cocoa powder, so the sprinkles are extremely low in carbs. I have not calculated the nutritional value for individual serving sizes. I want to leave it up to you as to how much you consider a serving size.
The sprinkles will keep best when stored airtight. I have used the sprinkles with no problem after storing them in an airtight jar for over 6 months.

NET CARBS are the carbohydrates that are absorbed by the body. To calculate the NET CARBS in the UK and most of Europe subtract the sugar alcohols from the total carbs count. In the US and other states subtract the fiber and sugar alcohols from the total carbs count
