KETO FATHEAD BREAD STICKS

Craving soft and cheesy bread sticks but you want to avoid carbs at all cost?

Then check out this keto friendly and completely gluten free recipe for the best keto bread sticks ever. These delicious bread sticks are perfect for dipping in some garlic or tomato sauce or as a filling side, along some winter warming low carb vegetable soup. They don’t look bad next to a crunchy summer salad either. Perfect for any season or occasion really.

TIPS ON MAKING KETO BREADSTICKS

For fat head dough, I like to grate my own mozzarella, to reduce the carb count of the recipe, as already grated mozzarella is covered in starch to prevent it from sticking together. I mostly use a block of 250g mozzarella and grate it by hand. You can grate larger amounts of mozzarella at once, measure 250g ( 2 1/2 cups) portions and freeze the cheese in freezer bags.

Instead of plain cream cheese you can use a flavoured cream cheese like garlic and herbs, this will enhance the flavour of the breadsticks.

I use organic extra fine almond flour for this recipe. This flour is a lot finer then regular almond flour, it also is defatted. That means some of the almond oil has been removed in the refining process. If you can not find this type of almond flour you can use regular almond flour or blanched ground almonds but your dough might be slightly softer and more difficult to work with. You can add an extra 1/4 cup of almond flour/ground almonds to the recipe, to give stability to the dough.

The dough can be really hot and slightly sticky. To make the dough easier to work with, let the dough rest for a few minutes before kneading it. This allows the cheese to cool down a little and harden a wee bit, resulting in a nice smooth dough that’s not too sticky or too hot.

I roll my breadsticks quite thin and long, depending on the size of your bread sticks you might get more or less breadsticks out of the recipe then me.

Keto Bread Sticks

Ingredients

Fathead dough

Seasoning

  • 4 tbsp butter
  • 1-2 cloves of garlic minced
  • 1 cup Parmesan grated
  • 1/4 cup Parsley finely chopped

Instructions

  • Pre heat oven at 180° c
  • Mix parmesan and parsley.
  • Microwave mozzarella with cream cheese till melted
  • Add baking powder, almond flour and eggs, then knead into a smooth dough.
  • Take some dough and roll into a small bread sticks. Then roll it out thinner in the Parmesan, parsley mixture, till the bread stick is covered in cheese. Repeat till all dough is gone.
  • Melt butter and mix with the minced garlic, then drizzle over the bread sticks.
  • Bake for about 15-20 min and enjoy.
