Okay you still have to spend an extra minute or so, mixing all the ingredients together. But this sugar free mug cake is an instant treat, ready when you are.

TIPS ON MAKING MUG CAKE

It’s best to measure the butter and add it to the mug first before adding other ingredients to the mug, so you can melt it without the need for an extra bowl.

If you want to substitute almond flour for coconut flour you can do so by using 1 1/2 tbsp of coconut flour instead of a mix from almond flour and coconut flour.

You can substitute the almond flour for blanched, ground almonds. Please note that the almond flour I use for this recipe is not defatted almond flour.

When I cook my cake in the microwave I pause the microwave once or twice as the cake rises really high. This prevents the cake from spilling all over the microwave.

You can make your own homemade sugar free jam by boiling and reducing chopped berries with erythritol or you can use a sugarfree jam like this one. Both work fine and are equally delicious.

Keto Jammy Mug Cake

Ingredients

Instructions

  • Add the butter into your mug, then microwave till butter melts.
  • Add the milk or cream
  • Crack the egg and add to the mug
  • Add 2-3 tbsp sweetener
  • Measure 3tbsp of almond flour and 1/2tsp coconut flour and add to mixture
  • Add baking powder and vanilla.
  • Mix everything really well with a fork.
  • Then add a dollop of sugarfree jam in the middle.
  • Microwave for 90 seconds.
  • Pause microwave for a few seconds in between, if mug cake rises too high.
  • Serve hot or cold with extra jam and cream
