KETO VICTORIA SPONGE CAKE

Traditional British tea time cake but without the sugar.

Ingredients

SPONGE CAKE

  • 4 tbsp melted butter
  • 5 medium eggs
  • 3/4 -1 cup sweetener
  • 165 g almond flour
  • 1 tsp vanilla or a few vanilla stevia drops
  • 1 tsp baking powder

CAKE FILLING

Instructions

  • Heat oven at 180°c
  • Grease or line a cake tin.
  • Mix all ingredients together with a handmixer.
  • Then fill the batter in a cake tin.
  • Bake the cake for about 45min or till a skewer inserted in the centre of the cake comes out clean.
  • Leave the cake to cool.
  • Whip cream with a hand mixer.
  • Cut the cake in half and fill the cake with whipped or clotted cream and sugarfree jam.
  • You can dust the cake with powdered erythritol.
